I don't think Anet will heavy-handedly cut off race / profession combos, but if each race is better at a particular class, it will effectively do the same thing.
The trick will be to make the races unique with their own bonuses, without making Norn Monks (for example) a "bad" combo.

Easier said then done, but it can be pulled off. One way is to make race/class specific skills that require you to be a certain class to use, rather then race specific skills irregardless of class that would be doomed to work better with certain classes then others.
To put it simpler, Each race would have 5 skills for each of the 10 professions that are unique to that race, meaning 50 class specific skills in total ( but you would only be able to use 10 of them at a time ).
This way all anet has to do is make sure those 50 skills are balanced with the others.

if they're not going to make the races substantially different, i don't see why they're burdening themselves with tons of hair styles, coat (fur) colors, faces, armor, etc
in fact, i doubt we'll even have armor for different professions now, just standard "charr" or "norn" armor

Undecided yet.
But here is my list from most favourite to least:
1.) Norn <I like the northern influence and individualism.
2.) Sylvari <Hard to judge with so little info around.
3.) Human <Always nice to play, but maybe a bit standard since my real-life char is already human.
4.) Charr <Playing as furry monster? No thanks. And Gwen would never forgive me.
5.) Asura <Annoying tiny arrogant creatures. Not my thing.
Professions: Elementalist/mage or ranger.

That's very possible, and actually makes some sense. Although it would make PvP harder (is that a Monk or an Ele?) by not limiting armor to specific professions, PvEers should be pleased to be able to get whatever armor they like.
